I had the same problem with my Clapotis - I bought 700 yards of yarn and still ran out.  It was very frustrating.

I would definitely go with option A because I am not a big fan of losing control, a' la option B. But I am sort of a beginner, and unknitting is a skill I have yet to fully master. I would have to rip down to the bone.
